Like many South American cities the organic movement is ever so slowly making its impact in Santiago. There are a few organic cafes around town, run by a small but passionate community of locals, who have a genuine interest in sharing their enthusiasm and knowledge with the public. The majority of the produce is grown by local farmers and without the use of chemicals, as the expense and paperwork that goes into getting certified often prevents providers from doing this, unless they are focusing on the export market (90% of organic cultivation is exported). Although not certified you can be pretty sure when wandering through the markets a wide range is sure to be organic.
